How To Prepare Nigerian Jollof Rice, Step by Step Guide


Jollof Rice

Jollof rice is based on rice, tomatoes, and usually meat or fish and probably originated from rice dishes eaten by the wolof people of Senegal and gambia.

Jollof Rice Ingredients
6 cups of rice
500g meat
1 chicken
2 large ripe tomatoes
1 large onion
1 tin tomato paste
½ teaspoon Thyme
Spices such as curry, salt and pepper to taste

Materials Needed
2 Cooking pots
Water
Frying Pan
Wooden Turner
Knife

Method of Preparation

Step 1:
Prepare the chicken, wash meat, chicken and pork.

Cut meat into moderate sizes and boil along with sliced onions, salt and seasonings

Then fry the meat and chicken in hot groundnut oil until brown

Step 2:

Slice onions, tomatoes and grind onions and pepper.

Then make a rich stew with tomatoes, onions, pepper and tomato paste seasoned with thyme and curry.

Add fried meat and chicken and little water, allow it to boil for 5 minutes

Remove some pieces of meat and chicken into sauce pan and cover (to be used to dress the cooked rice)

Step 3:

Parboil rice for about 20 minutes and then wash to remove surplus starch and drain the water

Put stew on fire and add enough water and add the rice in the pot of boiling stew.

Add salt and boil slowly. Boil briskly for about 5-10 minutes, reduce heat and stir occasionally

With heat reduced, wait till water level is way reduced in the pot of rice
Use wooden turner to continuously stir the rice to prevent it from sticking together and settling at bottom of pan

Note: this also prevents the rice from burning at the bottom of the pot
Add in a little water if rice is hard

Note: When the rice is well cooked it will be bright reddish and a bit soft
Serve rice on plate with meat and chicken

Note: You can use vegetables to dress the rice, you can also serve with green vegetables or boiled cabbage or eat alone.
