Isi Ewu
(Ngwo Ngwo)
Isi Ewu also known as goat head soup or spiced goat’s head
is a traditional eastern Nigeria dish that is made with a goat’s head. It is
also referred to as Ngwo Ngwo.
Ingredients
1 goat (head and legs only)
3 fresh chillie pepper
2 onions
1 clove garlic
1tsp peppersoup seasoning
8 fresh tomatoes
3tbs lemon juice
4tsp tomoto puree
200ml palm oil
1 litre meat stock or water
I sliced onion
Chopped wild mint
Salt to taste

Method
of Preparation
Step 1:
Singe the hairs off the head and legs of the goat
Step 2:
Scrape and singe alternatively until all the airs are off
Step 3:
Burn the hoofs and horns, peel them off with the point of a
heavy knife
Step 4:
Wash the head and legs thoroughly with soap and a rough
sponge or brush
Step 5:
Chop into small pieces with a sharp cleaver and rinse
thoroughly
Step 6:
Pour over the lemon juice and mix in
Step 7:
Leave to rest for 15 minutes
Step 8:
Grind together the onions, garlic, chillies and tomatoes
Step 9:
Place meat in a large pot, add the sliced onions, chillies,
stock and
seasonings
Step
10:
Cover and cook for 45 minutes
Step
11:
Check and stir frequently
Step
12:
Finally add the grind chillies, tomatoes, palm oil, onions
and wild mint
Step 13:
Bring to the boil and simmer gently for 30-40 minutes until
meat is tender
Step 14:
Adjust seasoning and serve in traditional earthenware dishes
garnish with chopped mint
Your Isi Ewu is now ready. Serve hot and enjoy!
