Bitter
leaf (Onugbu) Soup
Bitter leaf soup is a soup prepared with the freshly washed
leaves of the ever green plant called vernonia amygdaline. Bitter leaf soup is
popularly eaten by the igbo speaking people of Eastern Nigeria.
Ingredients
Bitter leaf
Cocoyam (thickener)
Fresh meat
Maggie
Onions
Grounded crayfish
Dried fish
Fresh pepper
Palm oil
Salt
Stockfish
Materials Needed
Knife
Water
Mortar and Pestle
Method
of Preparations
-Wash bitter leaf for about 15 to 20 minutes with water
-Taste to ensure that the bitter taste has been removed
-Peel and boil cocoyam for 20 minutes till it become soft
-Strain the cocoyam and pound in mortar, add palm oil in
measured quantity and pound till it forms paste
-Wash stockfish with hot water and wash the beef properly
-Season beef, dried fish and Stock fish and boil together for
at least 20 minutes until it becomes tender.
-Add water periodically to ensure that you have enough meat
stock.
-Add pounded cocoyam paste in measured quantity to the pot of
meat and fish.
-Add pepper and allow it to simmer for about 15 minutes
Keep stirring as you add cocoyam paste till you have the
desired thickness
Add salt to taste and stir properly
Serve with pounded yam or hot eba (garri)
