Honey Cake
Ingredients for Honey Cake
31/2 cups sifted all-purpose flour
1tsp baking soda
2tsp grounded cinnamon
¼ teaspoon salt
11/2 cups honey
1 ½ tsp baking powder
1 ½ tsp ground all spice
4 eggs
¾ cup white sugar
4tsp vegetable oil
½ cup strong brewed coffee
½ cup almonds
½ cup raisins
2 tsp lemon juice

Method Of Preparation
Step 1:
Preheat oven to 325 degrees F (165 degrees Celcius)
Step 2:
Sift together the flour, Salt, Baking powder, Baking soda, Cinnamon, and all spice
Step 3:
In a separate bowl, beat the eggs, gradually adding the sugar
Step 4:
Beat until thick and light in color for about 5 minutes
Step 5:
Beat in the oil, honey and coffee
Step 6:
Stir flour mixture into egg mixture
Step 7:
Chop the almonds coarsely and mix with raisins
Step 8:
Stir into batter
Step 9:
Oil the two pans and line the bottom with waxed paper
Step 10:
Oil again
Step 11:
Fill each pan with batter to within 1-1 ¼ inches from the top
Step 12:
Bake for 65 to 75 minutes until cake is done. Do not overtake
Step 13:
Let it cool for about 15 minutes and remove from pan
To Make Glaze:
Boil together 1 ½ cups honey, lemon juice, lemon zest and water
When glaze reaches a thick consistency, remove from heat and drizzle over cake
Sprinkle with almond silvers
